Amma Chicken Biryani

 

Amma Chicken Biryani

Chicken Biryani is a family favorite and this is my amma’s signature dish.Most sunday menu’s with chicken biryani.Easy pressure cooker chicken biryani.

Ingredients:

  • 2 inch Cinnamon stick
  • 2 Cardamom
  • 5 Cloves
  • 2 Bay leaves
  • 1 full Star anise
  • 1 tomato chopped
  • 3 sticks curry leaves
  • 2 pinch turmeric powder
  • 1/4 tsp chilli powder(to taste)
  • 1 ½ cup jeera rice/seeragasamba rice/basmati rice
  • 2 cup water
  • ½ cup coconut milk
  • 1 ½ tsp ghee
  • 1 ½ tsp oil

 

For grind masala paste:

  • 30 Small onions
  • 5 garlic pods
  • 1 ½ inch ginger
  • 25 mint leaves
  • 5 stick coriander leaves
  • 3 pinch garam masala powder

For Chicken Marination:

  • ½ lb(250gms) chicken
  • 1/2 tsp Ginger Paste
  • 1/4 tsp Garlic Paste
  • 1/4 tsp Chilli Powder
  • 1/4 tsp Turmeric Powder
  • 2 pinch Garam Masala Powder
  • 2 tsp Curd
  • Salt to taste

Method:

  1. Take a Bowl,add chicken,ginger garlic paste,chilli powder,turmeric powder,garam masala powder,curd,salt mix well and marination for 30 mins.
  2. In a mixer, small onions, garlic pods, ginger, mint leaves, coriander leaves, garam masala powder to grind a fine paste masala.
  3. Heat oil+ghee in a pressure cooker. Add cinnamon stick, cardamom, cloves, bay leaves, star anise. And add curry leaves chopped, grind masala paste to sauté for 5 mins.
  4. Add chopped tomatoes sauted for 2 mins. Then add turmeric powder, chilli powder, salt sauted for a min.
  5. Add chicken mix well and sauted for a min then add a ghee roasted rice mix well (see note how to roasted). Add ½ cup coconut milk, 2 cup water mix well.
  6. Finely, add a sprinkle of ghee mix and covered with the lid for 1 whistle.20 mins resting time to open.
  7. Serve hot with raita and kulambu.

Note:

  • Ghee roasted rice- wash rice quickly, heat the ghee 1 ½ tsp full in a pan drop the rice stir continuously to the lightly rice smell comes out take it out.

Take bowl,add chicken,ginger garlic paste,turmeric powder,chilli powder,garam masala powder,curd and salt and mix well marination for 30 mins.

Heat ghee in a pan.

Wash rice and add immediately.

Take small onion,mint leaves,coriander leaves,ginger,garlic,garam masala powder and grind a fine paste.

Add ghee in a pressure cooker.

Add cinnamon sticks,cloves,cardamom,star anise,bay leaf.

Add curry leaves.

 

11th

Add grinded paste and saute for raw smell goes out.

 

12th

Take chopped tomato.

 

13th

Add tomato and saute for 2 mins.

 

14th

Add turmeric powder,chilli powder and salt and saute for a min.

 

12th

Add marinated chicken and saute for 2 mins.

 

19th

Add roasted rice and mix well.

 

20th

Add water and coconut milk.

 

19th

Cover with the lid and cook for 1 whistle.15 mins resting time to open.Amma Chicken Biryani is ready now.
