Mutton Kola Urundai( Meat Balls )(Lamb/Goat)

 

Mutton Kola Urundai(balls)

Mutton Kola Urundai(Meat Balls) is a southindian dish. Especially Kola Urundai is famous in Madurai(Tamilnadu).Its made with mutton minced meat and ground masala step by step method below post.

Ingredient:

  • ¾ lb(300gms) Minced meat(boneless mutton)
  • 1/2 to 1 Egg
  • Oil for deep fry
  • curry leaves chopped
  • salt

For Grind Masala Paste:

  • 2 Cardamom
  • 2 Cloves
  • 2 Cinnamon sticks(small pieces)
  • 2tsp Fennel seeds
  • ½ tsp Cumin seeds
  • ¼ tsp Pepper corn
  • 10 Small onion
  • 1”inch Ginger
  • 6 pods Garlic
  • 4 Cashew nut
  • 2 tsp Pottukadalai(dry roasted gram dal)
  • 5 Green chillies
  • 1 Red chilli
  • 2 to 2 ½ tsp Shredded(grated) coconut
  • Curry leaves a little

Method:

  1. Heat a 1tsp oil in a pan and then add cardamom, cloves, cinnamon sticks.add curry leaves,fennel seeds,cumin seeds,pepper corn,cashew nut,ginger,garlic,small onion,green chilles,red chilli,sautéd one by one mix well.pottukadalai(gram dal),shredded(grated) coconut one by one and fry till the coconut turns slightly golden brown.
  2. Grind all the sauted items to fine paste.
  3. In a pan add water and minced meat(boneless mutton) boil  15 to 20 minutes and strain the water thoroughly. no water in the meat it’s a perfect to grind paste.
  4. Grind masala’s and meat paste both mixed together.add a salt and chopped curry leaves.
  5. Add a remaining broken egg mix well.
  6. Make a small meat balls to deep fry in medium fire till the balls turn golden brown.
  7. Mutton Kola urundai(Meat Balls) is ready now.

1st

Take small onion choped,garlic chopped,ginger chopped,curry leaves,green chillies,red chilli,shredded coconut,cinnamon sticks,cardamom,cloves,fennel seeds,jeera seeds,pepper corn,roasted gram dal(pottukadalai).

 

2nd

Heat oil in a pan.

 

3rd

Add cinnamon sticks,cardamom,cloves.

 

4th

Add fennel seeds,jeera seeds,pepper corn mix well and saute for a min.

 

5th

Add small onion,garlic,ginger and saute for 2 mins.

 

6th

Add green chillies,and red chilli mix well.

 

7th

Add roasted gram dal(pottukadalai) mix well and saute for a min.

 

8th

Add curry leaves and saute for a min.

 

9th

Add shredded coconut mix well and saute for a min.Then transfer into the plate.

 

10th

Cool down for 15 mins.And grind a fine masala paste.

 

11th

Heat water in a pan.Add minced meat(boneless finely chopped).Cook for 10-15 mins.

 

12th

Cool down for 15 mins.drain the water and using hands to squeeze water out completely and cooked meat transfer into the mixer to grind a paste.

 

13th

Take grinded masala paste,egg,curry leaves chopped,grinded cooked minced meat,salt.

 

14th

In a bowl,add grinded masala paste.

 

15th

Add grinded minced meat.

 

16th

Add salt.

 

17th

Add curry leaves.

 

18th

Add half egg mix well.

 

19th

Make round balls.

 

20th

Hot oil in a pan and immerse the meat balls to deep fry (a min).

 

21st

Like this color drain the oil and take it out.Mutton Kola Urundai(Meat Balls) is ready now.
