Ghee Mutton Roast(Goat Lamb)

Ingredients:

For Mutton Cook:

  • 450 gms (1 lb)Mutton (goat/lamb)
  • ¼ tsp Turmeric powder
  • 1 tsp Ginger paste
  • ¾ tsp Garlic paste
  • ½ tsp Salt
  • Water as required

For Grind paste:

  • 2 cup Mutton Stock Water (using for mutton cooked water) [or] (Mutton stock + water)
  • 1 Big onion chopped
  • 3 Dry Kashmiri red chilli
  • ¾ tsp Coriander seeds
  • ½ tsp Jeera seeds
  • 1/8 tsp Mustard seeds
  • 1/8 tsp Fenugreek seeds
  • 15 Pepper corns
  • 2 Cinnamon sticks
  • 4 Cloves
  • 2 Cardamom

For Dry Gravy:

  • 6 tsp -8 tsp Ghee
  • 1 tsp Ginger paste
  • 3/4 tsp Garlic paste
  • 2 sticks Curry leaves chopped
  • ¼ tsp Chilli powder
  • ¼ tsp Turmeric powder
  • ½ tsp Coriander powder
  • Cooked Mutton pieces
  • Grinded Paste
  • Salt to taste

Method:

  1. In a pressure cooker, add mutton pieces, turmeric powder, salt, ginger garlic paste and water. Mix well. Cover with the lid and cook for 18-20 whistle. 20 mins resting time to open.
  2. Open the lid separate mutton stock water and mutton.
  3. In a pan, add mutton stock water, big onion, kashmiri red chilli, coriander seeds, jeera seeds, fenugreek seeds, mustard seeds, pepper corns, cinnamon sticks, cloves, cardamom.
  4. Cook for 10 mins or absorbs water. Cool down and then grind a fine paste. Keep aside.
  5. Heat 3 tsp ghee in a same pan. Add turmeric powder, chilli powder, coriander powder mix well and then immediately add ginger garlic paste mix well sauté for 2 mins.
  6. Add cooked mutton pieces mix well and sauté for 2 mins.
  7. Add grinded paste to mix well and then add salt.
  8. Add remaining ghee to mix well and sauté for dry consistency and ghee comes out.
  9. Ghee Mutton Roast is ready now.

Cover with the lid and cook for 18 whistle. 20 mins waiting time to open.

Take mutton stock water,big onion chopped,red kashmiri chilli,coriander seeds,pepper corns,jeera seeds,fenugreek seeds,mustard seeds,cinnamon stick,cloves and cardamom.

 

5th

Take pan, add all ingredients to cook for 10 mins or till absorbs water.

 

6th

Cool down. Add mixture to grind a fine paste.

 

7th

Take cooked mutton pieces,grinded paste,turmeric powder,chilli powder,coriander powder,ginger garlic paste.

 

8th

Heat ghee in a same pan. Add turmeric powder,chilli powder and coriander powder mix well.

 

9th

Immediately add ginger garlic paste,curry leaves and saute for 2 mins.

 

10th

Add cooked mutton pieces mix well and saute for 2 mins.

 

11th

Add grinded paste mix well.

 

12th

Add salt mix well.

 

13th

Add remaining ghee mix well and saute for dry consistency or ghee comes out. Ghee Mutton Roast is ready now.
