Egg Kothu Parotta

Egg Kothu Parotta is a popular street food of Tamil Nadu especially in madurai.Kothu Parotta is made with parotta, eggs and salna (chicken kurma). Also known as Muttai Parotta.

Ingredients:

  • 1 ½ Parotta(paratha) finely chopped  (parotta)
  • ¾ cup to 1 cup Chicken kurma  (chicken kurma)
  • 2 Eggs
  • 1 Big onion finely chopped
  • 4 sticks Curry leaves chopped
  • ¼ tsp to ½ tsp Pepper powder(to taste)
  • Salt to taste
  • ¼ Tomato finely chopped
  • Oil as needed
  • Coriander leaves finely chopped

Method:

  1. Tear the parotta in to small pieces by using your hands and keep aside.
  2. In a dosa tawa, add onions sprinkle some oil to sauté for 5 mins till lightly brown. And then add pepper powder and salt and mix well.
  3. Add curry leaves mix well and then add tomato sauté for 3 mins.
  4. Then add pieced parotta sauté for 2 mins. Take a bowl 2 eggs beaten with chicken kurma and then add a top of pieced parotta mix well cook for 5 mins mix continuously.
  5. Now comes the kothu part of the parotta.
  6. Take a sharp edge spatula(stainless steel dosa spatula) or sharp edges cups. And then parotta till it becomes small pieces see image.
  7. Cook it for 5 mins.
  8. Garnish with coriander leaves.
  9. Serve with chicken kurma and riata.

1st

Take parotta,coriander leaves,curry leaves,pepper powder,salt,tomato finely chopped,onion finely chopped,salna,egg.

 

2nd

Take Parotta and finely tear.

 

3rd

Take one bowl,add egg and salna and beat well.

 

4th

Heat dosa tawa, add onion and sprinkle of oil.

 

5th

Add pepper powder and salt and mix well and saute for 5 mins.

 

6th

Add curry leaves and mix well.

 

7th

Add tomato finely chopped and mix well and saute for a min.

 

8th

Add parotta and mix well.

 

9th

Add egg and salna mixture and pour the mixture.

 

10th

Mix well.

Mix well.

Now comes the kothu part of the parotta.Take a sharp edge spatula(stainless steel spatula).And then parotta till it becomes small pieces see image.

 

13th

Add coriander leaves and mix well.

 

14th

Roast for 5 mins.Egg Kothu Parotta is ready now.
